MALTOL and ETHYL MALTOL usage is widespread and varied.
For fruity, and sweet beverages they are important ingredients for improving the flavor of orange, pineapple, blackberry, raspberry, strawberry and fruit blend flavors. Recently their use has expanded to exotic flavors such as mango, guava and passion fruit. MALTOL and ETHYL MALTOL enhance the natural, sweet, grape aroma in grape juice, as well as the flavor and aroma of apple juice.

In wines, MALTOL and ETHYL MALTOL can act as a stabilizer by minimizing acid flavor and creating a pleasant change in bouquet. This application is regulated by the Bureau of Alcohol, Tobacco and Firearms under 27 CFR 24.246. Other products such as cream soda and chocolate-flavored drinks also benefit from these ingredients. Flavored coffees and teas have become very popular in recent years. Flavors commonly used benefit from the smoothing, blending, and enhancing properties of MALTOL and ETHYL MALTOL .

The flavor of low- and no- calorie beverages sweetened with high intensity sweeteners can be greatly improved and rounded by using MALTOL and ETHYL MALTOL.
