The sweet , brown, caramellic qualities of MALTOL and ETHYL MALTOL make them excellent products for enhancing the flavor profile of baked goods. Cakes made with ETHYL MALTOL in the range of 50 to 100 ppm are more flavorful and rich tasting.

They are also very useful in cookies and pastries. The potential for improvement in flavor is particularly notable in "lite" baked goods with reduced levels of butter and / or shortening. An excellent use of these ingredients is in the fillings of baked goods,whether it's fruit pie fillings , custards, pudding type fillings of creams. In addition to traditionally prepared baked goods, the use of MALTOL and ETHYL MALTOL in microwave products has the benefit of enhancing the baked aroma.

DESSERTS
Gelatin desserts can be made with greater quality and strength of flavor using MALTOL and ETHYL MALTOL. These desserts have truer and more natural fruit flavors.
Frostings for desserts can have a more mellow, rich flavor as in the case of fudge frostings. Other flavors can also benefit giving the flavor and aroma a lift.

DRESSINGS AND SAUCES
There's a variety of products as well as function s for MALTOL and ETHYL MALTOL. For example , they might be used to enhance the sweet and fruity notes in a honey poppy seed dressing while minimizing the acid bite in ketchup.
